Mango Popsicle with Crushed Peanut Recipe

Mango and Salted Coconut Popsicle with Crushed Peanut Topping: We’re slightly nuts over these frozen ice pops. The sweetness of mango and coconut mingle enticingly with a salty peanut topping. Gotta love that unexpected crunch.



1. In a blender, combine the strawberries with 1/4 cup Simply Orange Low Acid and blend until completely smooth. Pour the mixture among 8 popsicle molds.

2. Rinse the blender out and add the mango chunks and remaining 3/4 cup orange juice and blend until smooth. Pour the mango mixture over the strawberry mix, filling the molds to the top. Use a knife to gently swirl some of the strawberry puree up into the mango puree. If desired add a few thinly sliced strawberries to each mold.

3. Place the molds in the freezer and freeze for 1 hour. Remove and insert popsicle sticks. Return to the freezer and freeze until firm, about 4 hours. To remove the popsicles run the mold under hot water for 10 seconds and then pull the popsicles out of the molds. Store in the freezer

Serve dipped in crushed salted peanuts, for that extra crunch and salty twist.
